Rhubarb Cake



Okay, I just don’t want to write a blog today. Tired, overworked, lazy, old, ugly, sore neck, too many muscle relaxants and it seems that I have an empty mind.

I have been using it for the past few days to keep a monologue going and those grey cells need a break. I could use one of the back up blogs I have written, but I don’t think so. Sorry.

Just so this isn’t a complete waste of time for you, here is a recipe for Rhubarb Cake. It is very good and goes with summer.

RHUBARB CAKE

1 ½ CUPS SUGAR                                         1 CUP SOUR CREAM
½ CUP SHORTENING                                  1 TSP SODA
1 EGG                                                             2 CUPS FLOUR
1 TSP VANILLA                                            2 CUPS CHOPPED RHUBARB

Cream sugar , shortening, egg and vanilla. Sift together flour and soda and add alternately with sour milk, starting and ending with flour. Fold in rhubarb. Sprinkle on topping and bake at 350 º  for 45 minutes. Use a 9 X 12 glass baking dish. Flour pan.


TOPPING

1 cup finely chopped rhubarb
½ cup sugar
1 tsp cinnamon


Note: If using and aluminium pan remove cake from pan after it cools as the acid in the rhubarb reacts with the aluminium and the cake takes on a metal taste.
